Parmesan-Crusted Fish


For our Valentine's Dinner i made Parmesan-Crusted Fish. The dish went on my list of "will make again" dishes. We had it again for dinner last night. I have decided to share the recipe with you all. It comes from a cookbook that we got as a wedding gift. The Newlywed Cookbook, by Robin Miller has some great dishes, including this one. The recipe calls for Flounder, however living in the mountains of South Carolina make it somewhat difficult to find fresh fish. I used frozen Balsa and thought it was wonderful. I think any white flaky fish would be fine, i may even try it with chicken fillets next time.

Needed Items:
3 tablespoons Italian-style dry bread crumbs
3 tablespoons grated Parmesan cheese
1/2 teaspoon dried rosemary
1/8 teaspoon cayenne pepper
2 flounder fillets- 4 oz each- unfrozen, if you are using previously frozen fish.
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 cup all-purpose flour
1 egg, lightly beaten
2 teaspoons olive or vegetable oil
1/4 cup dry white wine ( i just used the white wine i was drinking, don't think it was that dry)

1. In a shallow dish, combine bread crumbs, Parmesan, rosemary, and cayenne pepper. Mix well and set aside.
2. Season both sides of fish with salt and pepper. Dredge fish in flour and turn to coat both sides. Dip fish in egg and then into bread crumb mixture. Turn to coat both sides.
3. Heat oil in a large non-stick skillet over medium heat. Add fish and saute 3-4 minutes per side, or until golden brown. Add white wine and saute 1 minute, or until liquid is absorbed and flounder is fork tender.

Preparation and cooking time: 20 minutes
Serves 2- However i just increased the ingredients in the breadcrumb mixture so i could use 3 pieces of fish. Casey likes to eat :)

Spring Is Here!

Flowers are popping up everywhere in our yard! These are the first ones to bloom. It is so exciting to see what is in our yard. With moving in at the end of summer we saw our fruit trees, but did not know of all the flowers. Every day i see more and more bunches pop out of the ground. More pictures to come as they bloom!!

Greenville Zoo







Today C3 went to the Greenville Zoo for the first time. We really enjoyed it. The weather was perfect, not too hot or too cold. There were not lots of people which was also nice. Colton was still a little young to really enjoy it and the animals. Casey and my highlight of the day would have to have been when the Lion jumped on top of the rocks and started roaring. Colton's highlight was when we stopped at the chickens and he started clucking at them!

Happy Valentine's Day from C3!!

Casey and I celebrated our Valentine's Day on Friday the 13th! We have had it planned for months now. As a wedding gift our friend Angela got us a personal chef to come to our home and cook for us. We decided to go with a "Florida" theme with Fish as our main course and Key Lime Mousse for dessert.

On Friday the 13th at noon our chef called to tell us that she was not feeling well and would have to reschedule :(

We still went with the "Florida" theme. I made a key lime pie and tried a new fish recipe ( from a cookbook Danielle got us as a wedding gift). We had a great dinner in spite of the fact that i had to cook it. We will be rescheduling our dinner in the very near future.

Date Night- Go Eagles!!


So last night Casey and I had a date night. FGCU's boys basketball team was playing USC Upstate. We decided it would be fun to go to the game. Boy were we wrong!!!!! I have never been so scared for my life at a game. USC Upstate fans are CRAZY and not in a good way. Students were yelling at FGCU's coach and players trying to pick fights. Parents were yelling at FGCU's coach and players. Faculty ( it was faculty night) were also just as bad, if not worse at times. Casey and I were wearing blue in a sea of green.
I have been to plenty of FGCU games while still living in FL. Going to this game made me proud to be an Eagle! USC Upstate fans do not know what the word sportsmanship means!
FGCU lost by a few points. If we had won i don't know if i would have lived to tell you about it. USC Upstate fans are out for blood. I have never seen anything like this in all of my years of basketball watching ( high school, college, and the NBA).
On a positive note- Quarterback Brad Johnson from the Dallas Cowboys was there. We were sitting really close to him, so i was able to get a picture. We thought about asking him to take a picture with us, but decided not to draw any attention to us.

Leslie's Baby Shower

Today Kate, Jayce, Colton and I spent the day outside of Atlanta for my cousin-in-laws baby shower. We had such a good time catching up with the Taylor side of the family. It was an easy drive, we will have to do this more often. Leslie looked great with all her pregnancy glow and we were so happy to be invited and see her before baby Carson comes.

Casey and i are planning a trip to come back to Atlanta maybe in March or April to spend time with his family there and to meet Carson for the first time!!!

It is great to be so close to family!!!




Colton had a blast running around the ENTIRE shower. I am going to sleep well tonight!

Cheers!








As a wedding gift Casey and I were given a bottle of bubbly. We were saving it for a special occasion. Wednesday night we decided to pop it open. Casey was celebrating his first week of work for a Construction company, and i was celebrating my job offer with a well known shipping company!!! Cheers!!! Life is good!!

Surfing the Web



Casey and I walked into the living room to find Colton "surfing the web". We think he was trying to write an email to Nene and Papa, and Grandma and Grandpa.

A Day At The Park









This week i found a great park in Pickens. We have gone twice this week. I love that Colton gets to play outside and get some fresh air. However right now Colton doesn't do much playing, he pretty much just runs around like a crazy person, but he loves it!!! We are still working on his outdoor running because he does not always watch what he is running over. Yesterday he tripped over some roots and did a face plant onto the ground :( His nose is a little scratched up but other than that he was fine. I look forward to taking him again ( we will stay away from the roots) and watching him grow and explore new things at the park.
